Cheesy Garlic Baked Shrimp and Grits

I love shrimp and grits. Don't you? I used to find the concept so strange. Grits are a breakfast food! Wrong. They are the ultimate comfort food.

I whipped this up a couple weeks ago and it was a big hit.

What you'll need:

1 pound shrimp (peeled, deveined- you know the drill) 

3 cups water

1 cup grits (uncooked) DO NOT USE INSTANT (unless you like lumpy glue- then go for it)

2 cloves garlic (minced)

2 cups cheese

3 eggs (beaten)

4 tbsp butter

olive oil

Preheat your oven to 350

Boil your three cups water, add in your one cup grits and stir. Let thicken for about two minutes Right before your grits thicken add your.

In a skillet warm some olive oil and sautee your garlic. Throw in your shrimp and cook until they are just pink. 

Put the grits in a baking dish that has been sprayed with Pam. Stir in two cups cheese and three eggs. Next drop your shrimp in the grits. 

Bake for 30 minutes at 350.
