Strawberry cheese cake cupcakes... wouldn't you know

My husband loves strawberry anything. If we go for a milkshake he wants strawberry. I made fun of him endlessly for this for years.

I wanted to try something new for the 4th of July (my absolute favorite holiday) so I decided to marry all of Beardface's favorite things- strawberries, cupcakes and cheese cake. 

I took them to my parent's house where my Daddy said they were "just as good as" anything he had ever eaten. That's a big complement. Huge. 

The recipe has a lot of steps, there is crust, cake and frosting. 

I found a recipe on The Girl Who Ate Everything- but then I modified it slightly. 


What you'll need: 

Graham cracker crust:

2 sleeves graham crackers, crushed 

1 stick melted butter

2 tablespoons sugar - note - if you are using the cinnamon flavored graham crackers you do not need to add sugar. You won't miss it. Trust me. 

Cake:

Two cups chopped strawberries plus more for garnish

1 1/2 cup All Purpose Flour

1 1/2 sticks butter

1 cup sugar

1 tsp vanilla flavoring

1/2 cup sour cream

4 egg whites

1/2 cup Jet Puffed Marshmallow Creme

Frosting:

2 - 8 ounce packages cream cheese - I used low fat. Which is hilarious considering all the butter in this recipe

2 sticks butter - softened but NOT melted

4 cups powdered sugar

1 tsp vanilla flavoring. 

Preheat your oven to 350 and prepare your muffin pans.

In a bowl (or food processor) combine your graham cracker crumbs, butter and sugar. Mix. Then press the crust into your lined muffin pans. 

In a big mixing bowl combine your flour, sugar, vanilla, and mix. Then add your sour cream, eggs and butter. Fold in marshmallow creme. 

Add in your strawberries and mix your heart out. 

Pour the mix over your crust. 

Bake at 350 for about 15 - 20 minutes.

Get your mixer out and prepare to make your frosting. In your mixing bowl cream your butter, which has been softened to room temp. 

When the butter is creamed add your cream cheese. Then slowly add your powdered sugar one cup at a time. 

Once the cupcakes have cooled, frost them. I put my frosting in a plastic bag, cut off the tip and piped them onto the cake. 

Then garnish with a strawberry.
