Triple Chocolate Pudding Cookies

I never considered myself a baker. It wasn't something I enjoyed doing, in fact it kind of stressed me out. Too much chemistry involved!

But then I realized, just like cooking, how therapeutic baking could be, especially when coming up with new recipes or new takes on old ideas.

Have you ever put pudding in a cookie? Oh my goodness! It makes them so moist and delicious! Sunday afternoon I decided to do a little baking and came up with this little gem. It's a triple chocolate pudding cookie!

Note: This recipe was inspired by this recipe I found on Pinterest.

What you'll need:

1 cup butter, melted

2 1/2 cups all purpose flour

1 teaspoon baking soda

1 cup sugar

2 tbsp cocoa

2 eggs beaten

1 tsp vanilla

1 package instant chocolate pudding 

1 bag chocolate chips

Preheat your oven to 350 and grease your baking sheets. (You will need 3)

Combine your first seven ingredients. The mixture will seem a little dry and thick. It's okay. That's how it is supposed to be. 

Then fold in your chocolate chips. 

See how thick that batter is?

Spoon out four batter. This recipe will yield about 3 dozen cookies. 

Bake at 350 for about eight minutes.
